The perfect combination for our team of caterers at Hog Roast Colwyn Bay: a sunny spring day and a wedding to cater for. We were blessed to enjoy this exact combination over the past weekend as Ste and the Hog Roast Colwyn Bay team headed out to Old Colwyn to cater for the special day of the lovely Imogen and Lennon. The happy couple were a delight to work with over the last few months as Ste helped them to devise a perfect menu for their wedding day. That delight carried on into the day itself, where they were fortunately rewarded with a beautiful sunny day to enjoy for their wedding.
The sunny weather not only helped the photos, the ceremony, the brilliance of the day, but also our dining too. As a caterer you can plan and plan certain types of menus and services, but sometimes the weather in the UK just will not play along (in fact, most of the time it won’t). This was not one of those days.
Everything aligned just perfectly to ensure that our summer style dining had a naturally sunny, summer’s day in which to serve. That meant our menu came off all the better, as guests tucked into our southern slow roast faves. A menu inspired by the sunny barbecue dining of the American southern states, it packs in flavour, spice, and smokiness for a perfect summer’s day. Like our barbecues here in the UK, it’s about comfort dining in the sun, only with a little more of an added kick.
Imogen and Lennon took up Ste’s recommendation to try our Texas style 24 hour beef brisket, as it’s slow roasting style creates a beautiful and tender finished dish with melt in your mouth textures. This works nicely alongside our own BBQ pulled pork, made fresh from one of our names hog roasts, and our Cajun marinated chicken thighs. For sides, your classic American corn cobettes with butter, mac and cheese, and fresh fries to soak up even more of our hickory barbecue dips and hot sauces.
